Deviled Eggs

Ingredients

  • 4 Lg hard-cooked eggs
  • 1 T + 1 t fat-free mayonnaise
  • 2 t prepared mustard
  • 1 t drained prepared horseradish
  • 1/2 t anchovy paste (optional)
  • 1/4 t salt
  • Pinch of freshly ground pepper
  • Pinch of paprika, or 8 small sprigs of parsley

Preparation

  1. Slice the eggs in half lengthwise. Remove the yolks and mash in a small bowl with a fork.


  2. Add mayonnaise, mustard, horseradish, anchovy paste if desired, salt, and pepper to the yolks. Mix well until smooth.


  3. Fill the egg halves with the yolk mixture. Garnish each with paprika or parsley springs.
