Ingredients
- 4 Lg hard-cooked eggs
- 1 T + 1 t fat-free mayonnaise
- 2 t prepared mustard
- 1 t drained prepared horseradish
- 1/2 t anchovy paste (optional)
- 1/4 t salt
- Pinch of freshly ground pepper
- Pinch of paprika, or 8 small sprigs of parsley
Preparation
- Slice the eggs in half lengthwise. Remove the yolks and mash in a small bowl with a fork.
- Add mayonnaise, mustard, horseradish, anchovy paste if desired, salt, and pepper to the yolks. Mix well until smooth.
- Fill the egg halves with the yolk mixture. Garnish each with paprika or parsley springs.
