Spinach-Mandarin Salad

Ingredients

  • 4 C fresh spinach
  • 2 C cherry tomatoes
  • 1 1/2 chopped cooked chicken breast (Skinned before cooking and cooked without salt). Chilled.
  • 1 C thinly sliced radishes
  • 1/2 lb. fresh mushrooms, sliced
  • 1/2 C croutons
  • Mandarin Dressing
  • 2 T sesame seed, toasted

Preparation

  1. Wash spinach leaves thoroughly in cold water; drain. Remove and discard stems. Place spinach in a large bowl.


  2. Add tomatoes and next 4 ingredients. Add Mandarin Dressing and toss gently. Top with sesame seeds.
