Ingredients

  • 2/3 C sour cream
  • 1/3 C mayonnaise
  • 2 t Dijon mustard
  • 3/4 lbs spinach, washed, dried, and stems removed
  • 6 oz mushrooms, sliced
  • 2 C alfalfa sprouts
  • 1/2 med cucumber, thinly sliced
  • 1/2 C diced celery
  • 1/2 C diced cauliflower
  • 1/2 C diced green bell pepper

Preparation

  1. In a small bowl, mix sour cream, mayonnaise, and mustard until smooth and well combined.


  2. Cover and refrigerate for 1 hour or longer to blend flavors.


  3. In a salad bowl, combine spinach, mushrooms, sprouts, cucumber, celery, and cauliflower. Set aside.


  4. Before serving, add sour cream mixture to the vegetables and toss lightly.


  5. Garnish with diced green peppers.
