Ingredients
- 2/3 C sour cream
- 1/3 C mayonnaise
- 2 t Dijon mustard
- 3/4 lbs spinach, washed, dried, and stems removed
- 6 oz mushrooms, sliced
- 2 C alfalfa sprouts
- 1/2 med cucumber, thinly sliced
- 1/2 C diced celery
- 1/2 C diced cauliflower
- 1/2 C diced green bell pepper
Preparation
- In a small bowl, mix sour cream, mayonnaise, and mustard until smooth and well combined.
- Cover and refrigerate for 1 hour or longer to blend flavors.
- In a salad bowl, combine spinach, mushrooms, sprouts, cucumber, celery, and cauliflower. Set aside.
- Before serving, add sour cream mixture to the vegetables and toss lightly.
- Garnish with diced green peppers.
