Fresh Tomato, Mozzarella, and Basil Salad

Ingredients

  • 2 T pine nuts
  • 2 Lg. ripe, red tomatoes, cut into thin wedges
  • 4 oz. part-skim mozzarella cheese, sliced and cut into inch wide strips
  • 1/2 C shredded fresh basil
  • 1 sm. Red onion, thinly sliced
  • 1/4 C light or fat-free Italian dressing

Preparation

  1. Place the pine nuts in a dry skillet and toast over medium heat for 4 or 5 minutes until lightly browned, shaking the pan occasionally to prevent the nuts from burning. Reserve.


  2. Combine all the remaining ingredients in a large bowl. Chill several hours. Top with the pine nuts before serving.
